Milk, soft cheese, mustard and ketchup. He also recommends adding baked salami to it. I think by soft cheese he means some kind of goat cheese or brie, maybe Nêufachtel? Or there are a few spreads out there that are soft, but those have herbs and stuff that I don't think Bill puts in his sauce. By the way, this tastes REALLY gross, even on spaghetti.

Yes, you shouldn't have any problem with this. I don't think I'd do it if the spaghetti sauce was made with clams or poultry but if it's vegetarian or beef-based, you should be fine.

Herbs are more often used in spaghetti instead of spices to add flavor. Most spaghetti sauce recipes will call for oregano. Some call for one or more of oregano, thyme, rosemary, and basil. Sometimes marjoram is used instead of the oregano. Fresh herbs will have better flavor than dried, especially basil. To test your spices for yourself to see what might taste good to you, take a bite of your spaghetti sauce and stand where you can also easily smell it heating in the pan, then open a jar of a spice and smell it. If it smells good it will likely taste good to you. If it doesn't seem like it goes with the flavor and aroma of the sauce, then try another spice. Once you think you have some that might taste good with your sauce, try a very tiny amount sprinkled on a bite of the sauce and see what you think. Herbs do better blended together than spices as a rule of thumb. It is easy to get flavors too complex and competing by adding multiple spices. You can do this same test with dried herbs. For fresh herbs, gently bruise a leaf or two of the herb and give it the smell test.
