Vitamin B-6 removes a carbon in chemical reactions. This gives it a role as an enzyme in over 100 reactions in the body. Some specific functions are carbohydrate metabolism, lipid metabolism, protein metabolism, neurotransmitter synthesis, and amino acid conversion/rearrangement.
The vitamin is essential for efficient nerve and muscle function. It is also involved in the initial breakdown of glycogen, and in the formation of antibodies and haemoglobin. Deficiency, although relatively rare, causes nervous irritability, anaemia, convulsions in infants, and sores around the eyes and mouth in adults. Excessive intake results in depressed tendon reflexes and loss of sensation in the fingers and toes. Intakes greater than 500 mg per day are associated with permanent sensory nerve damage. In the UK, the adult Reference Nutrient Intake is 1.4 mg per day for males, and 1.2 mg per day for females.

Vitamin B6 has a function in the in vivo antioxidant defense of plants. The antioxidant activity of vitamin B6 inferred from in vitro studies is confirmed in planta. Together with the finding that chloroplasts contain vitamin B6 compounds, vitamin B6 functions as a photoprotector that limits 1O2 accumulation in high light and prevents 1O2-mediated oxidative damage.
Vitamin B6 deficiency can be prevented or treated with consumption of the recommended dietary allowance, as supplied by food or by vitamin supplements.
