Coriander has a pungent lavender-like smell. I smelled this from the seeds, not from the leaves.

Volatile means to evaporate rapidly. Non volatile would then be not aromatic. If you can smell an oil then it is most likely evaporating. Can you smell the coriander? Then you are smelling the oils. This doesn't mean that there are not non volatile oil (glyrerides) in the spice.
I don't think so. About 10 minutes ago I was handling a stink bug nymph in the garden, and it released some of its 'smelly' liquid onto my hand. The problem being that I can't smell a thing! I've read that the smell of the bug is similar to liquid sewage. Anyway, I certainly didn't smell corriander!

Vietnamese coriander is very much like cilantro and makes an excellent substitute as does coriander and parsley
