Teff is a tiny grain that's the staple crop of Ethiopia. 150 grains of teff fit into a single wheat kernel. There are over 1,000,000 seeds in one pound of teff. Teff can be used as a substitute for wheat. If you are making injera bread but teff flour is not available, you can use wheat flour, rice flour, or barley flour.
