Rise: a high demand for beef in the East, and a huge surplus of feral longhorned cattle in the South and West

Fall: completion of the railroads, introduction of barbed wire, overgrazing of rangelands, and more settlers from back East were coming west to settle and farm the land and build more towns and cities. Also, the feral cattle that were rounded up and shipped back east nearly went extinct, and were taken over by European imported breeds like Hereford, Angus and Shorthorn, as well as Charolais and Simmentals later on.
