Quick answer: Because if you think about it LEGO has only a limited range of a few million pieces. However anything on this planet can be made from these simple pieces. So it is exciting to see the wonderful creations that can be made by LEGO. It's the fascination of the unlimited possibilities. I personally am a LEGO fan.
