Bear in mind that each font will have significant differences one to the next, and none will fit the original document exactly.

If you are trying to create a replica, you may have to use several fonts in the same document, then convert the text to an image, and then tilt or skew it to make it more like the original.

Here are two fonts that are close, with the font names to search for:

champignon: champignon.otf and champignonaltswash.ttf

adene kirnberg script: adinekir.ttf

If you examine other fonts based upon handwriting of that time, you'll find some interesting comparisons. One such font is jeffrson.ttf, which is based upon a sample of Thomas Jefferson's handwriting. As you would expect, there are examples of his handwriting that do not fit that font.
