I'm not sure I understand the question. But of course the globe is a sphere, and a sphere can not be correctly represented on a 2D plane (eg. a paper map). The distortion effect is minimised though as the area represented gets smaller.

The other is that grid north and magnetic north differ.

If on a flat map you draw horizontal & vertical lines that represent latitude & longitude then draw a map with correct latitude & longitude locations, Which you get from a globe, there will be a size distortion. If you draw a map with correct size & distances then the location (latitude & longitude) will not be correct. These distortions are greater near the poles.
