It's more efficient. The general term for cells extracting stored energy is "cellular respiration." Despite the name, this doesn't necessarily involve breathing or even elemental oxygen; however, the type that does is a lot more efficient than the type that doesn't. Animals breathe in order to take in oxygen so their cells can use the more efficient pathway.

Animals do not use up all the oxygen in the atmosphere because plants produce oxygen. When they breathe, plants inhale carbon dioxide (which is what animals breathe out) and exhale oxygen (which is what animals breathe in).
