B1 defeciency is related to a disease called beriberi. It can include irregular heartbeat, edema (puffy) in the extremities, paralysis, and other nervous system ailments.
It gets its name from people in Asia who only ate white rice. They ended up with this problem, wheras people who ate brown rice did not.
At first, the signs of vitamin deficiencies are not very noticable, but over time, they can become more obvious, like extra weight. If you lack Vitamin C, it can cause tiredness and weakness. If you don't take any Vitamin D, you could have weak bones. Lack of Vitamin E can result in destruction of red blood cells. In some cases, lack of vitamins has lead to death.
A blood test can tell you if you do't have enough vitamins, but generally, you have good judgment about your body, so you should know if your not getting enough on your own.
But remember, taking TOO many vitamins isn't good either, so bear that in mind when taking them.
One reason there are so many symptoms listed (and trust me, these aren't even all of them) is that there is no "Vitamin B"... there are a variety of different chemicals, each of which does something different in the body, that are collectively called the "B vitamins." A Vitamin B6 deficiency produces different symptoms than a vitamin B9 deficiency.

Vitamin E is not as critical, but a deficiency of it will still have a harmful effect on health.
