A hobby is something a person does from interest and pleasure, not from necessity to hone his skills. In Holmes case he became a bee keeper ("His Last Bow"). In earlier stories he is shown to be musician of sorts (he played the violin, and wrote a monograph about Orlando di Lasso )
In work related activities he was an a master of disguise, excellent boxer, singlestick player (probably Bartitsu immortalized and mis-spelled as "baritsu" in the stories) and swordsman. He also wrote monographs about a number of topic - the Buddhism of Ceylon, the warships of the future and tobacco (or at least tobacco ash)
Sherlock Holmes enjoys fencing, talented at fencing but most of all, he loves the violin as well as music itself and to test out new chemical experiments. According to him, his mind starves for things to think and to do.
