Chileans and Peruvians are divided on who invented the pisco sour, but the drink was popularized in this country. Stick to a maximum of two -- these babies are potent!

Chile has garnered worldwide recognition for its fine wines, the bulk of which are exported to outside markets. However, you will be able to get your hands on fine boutique wines not available or easily found in the U.S., so visit a vinoteca (wine store) and see what's on offer. Moderate-quality wines are lower in price by U.S. standards, but expect to pay premium for reserve and icon wines.

Chile's lager beers are (listed from lightest to strongest): Cristal, Becker, Austral, and Escudo, and the dark beer Morenita. The Peruvian beer Paceña is catching on, as is the Brazilian beer Brama. Chilean brewers have been toying with microbrews, but they're not yet the sensation they are in the U.S. -- the best is Kunstman, followed by Capital. Otherwise, you'll find Corona, Budweiser, Heineken, and Guinness in most shops and restaurants.

Chileans have an organic mediterranean-based diet as their common major lifetyle, with local influence firstly from the Spanish and Latin-American cuisine, as well as German, Italian and Greek cuisines in the last 200years.

In overall, Chileans today eat normal western food like Americans does: BBQ´s, Ribs, chicken, soups, salmon, turkey, rice and spaghetti as well as Pizza, sodas, french fries and Hamburgers from many major American franchises. The foreign influence began centuries ago with the Spanish and Latin-Americaninfluence such as, Tamales, Chicha, Cazuela and Seafood Paella. Later by 1810, came German pastries such as Küchen, strudel, berliners and beers and sausage; and the Italian variety of pastas and filled veggies from the Greek and Levantcuisine.

In the last 20 years, Wine-tasting and Ethnic cuisine have been gaining more urban customers to trendy restaurants. Chinese food was popular in the 80s, Mexican food was popular in the 90s and Japanese and fusion-style food after the year 2000.

Main Chilean dishes:

- Chilean Empanadas (Chilean Baked Meat Turnover) This national dish is actually a very popular fast food on the go as Hot-Dog does. Its filling has a meat mixture called pino, which is ground beef, onions, hard-boiled eggs slice, raisins and olives. Served as aperitifs in Sundays lunchtime or on the go. Usually Chileans cheer it up with a cup of Chilean Red Wine, which is among the finest wines in the world.

- Humitas (the Chilean version of Mexican tamales) This is a traditional and favorite summertime in Chile. Like a Mexican tamale, it is ground corn cooked in the corn husk, but it's not spicy - just a bundle of fresh, sweet corn.

- Pastel De Choclo (Corn Cake) baked on terracotta soup-dishes, this is a favorite Chilean dish. The bottom layer of the casserole is a meat mixture called pino, which is ground beef, onions, hard-boiled eggs slice, raisins and olives. Sometimes a bit of chicken is included. The top layer is ground corn, best if fresh, sprinkled with sugar to brown as it bakes.

- Costillar de Cerdo (hot spicy version of American Ribs). Popular on american-style BBQs.

- Sopa de Porotos Granados (Cranberry beans with Corn and Squash Soup) . A very popular vegetarian soup/stew that warms the tummy on a cold day.

- Completo Italiano (Avo-Dog) Chilean version of the American Hot-Dog with a creamy and mashed avocado as plus and chopped tomato. Very nutritive.

- Chilean Chicha is made from grapes or apples and drunk during the 18th of September celebrations (National Day). "Chicha" can also refer to a type of homemade sweet wine made by families for special occasions.

- Curanto (The Chiloé Island´s Seafood BBQ hole with hot stones)- Similar to hawaiian Kalua cooking style, consist of shellfish, meat, potatoes, potato bread, sausage and vegetables (sometimes including also specific types of fish). The quantities are not fixed; the idea is that there should be a little of everything. Each layer of ingredients is covered with nalca leaves (Chilean rhubarb), or fig eaves or white cabbage leaves. All this is covered with wet sacks, and then with dirt and grass chunks, creating the effect of a giant natural pressure cooker in which the food cooks for approximately one hour.
