You should be aware of how temperature and different melting methods (adding warm milk, double boiler, microwave, ect.) affect the different types of chocolate, like milk, dark, white, bitter-sweet, and semi-sweet. You should also know how to safely handle the ot chocolate and other hot and potentially dangerous materials. Know how to properly temper chocolate, too.
I am not entirely sure I understand the question, but I believe the answer is yet. The darker the chocolate is, the higher the percentage of pure cocoa (making it taste less sweet and more bitter). The more cocoa that is in chocolate, the easier it will be to burn during the melting process.

Check the fountain instructions for measurements/ratios but by adding vegetable oil to the chocolate chips when melting prevents them from hardening and allows the chocolate to flow easily.

There isn't much of a difference but semi sweet is less likely to burn and is not as sweet as milk chocolate. Hope this helps!
