A full flavored EVOO (or extra virgin olive oil) is an olive oil that is robust in flavor. Usually having a very "earthy" taste. Typically the EVOO with the fullest flavor is Kalamata Extra Virgin Olive Oil. Most Greek EVOO is Kalamata. The one that I found has had the best full flavor is Martinis Extra Virgin Olive Oil, imported directly from Greece. It can be found at Amazon.com, shop.martinisinc.com, or even at your local Trader Joe's.

What is a virgin olive?

Freshly harvested olives are squeezed, or pressed, for their oil. The very first pressing is known as the "extra virgin" pressing. That is where the name extra virgin olive oil (EVOO) comes from.
