If you are looking to substitute the brandy taste in a recipe, you can use brandy flavored extract. You would not use the same amount, as an extract is concentrated, therefore, you would only use about 1-2 teaspoons of the extract.
If you are using brandy for it's alcohol content, and are desiring a different alcohol substitute, you can use rum or vermouth.

∙ 14y agoI generally use white wine or dry sherry. I've even used red wine and it tastes great. One other tip, cook the mushrooms in a dry cast iron skillet until they release their juices and brown before you add them to the sauce. Also a bit of freshly grated nutmeg just at the end stirred in is fabulous.

You can also use Port wine as its alcohol fortified.
Since brandy is distilled wine, you use some lighter whiskeys or Bourbon to similar effect.
