Well tomatoes are supposed to help prevent cancer so heres a good tip... don't substitute em'.
Some people, like myself, can not eat tomatoes. They may be allergic to them, or they may not be able to eat them because of the acid content. Telling someone not to substitute them is just illogical.
I'm just starting on the no tomato journey myself, as my doctor just said I can't eat them any more.
I've been reading a lot about substitutes. Most of them won't work for me, but they might for you, it really depends on what you want to use them in.
A lot of people suggest roasted red bell peppers pureed. (I don't like bell peppers at all so that is out for me. Also, if an allergy to tomatoes is your problem, then you probably shouldn't eat bell peppers either since they are of the nightshade family)
Some suggest squash. Different squashes are suggested, it seems it's a preferred taste thing.
I know I'll be using different pestos. I don't know what else yet.
I've read that many people who can't eat tomatoes have no trouble with tomatillos. But they are green.
I know I haven't given you many suggestions, but keep looking. There are some things out there.
Turnip or butternut squash is a good substitute. Rutabaga is a bit sweeter but in a pinch either will work.
