A fraternity works through a hierarchical system. At the top is the grand chapter, who oversees all of the chapters. The next step down is the chapter, which is the fraternities representation on an individual campus. For example, the fraternity as a whole is Zeta Psi, but the chapter at American University is Delta Chi. Basically, it makes it easier for brothers to differentiate which school you go to/graduated from.
There is no man named Grand in Moby-Dick. The only capitalized "Grand" in the first chapter is the "Grand Contested Election for the Presidency of the United States." I'm linking below to a full-text search on the word "grand" and also to the first chapter of the book.
