Shred potatoes and some onion with a cheese grater. Whip up an egg and a teaspoon of flour (you should make enough to just coat however many potatoes you shred probaly one egg to two potatoes) whip up the egg and flour very well. Add some seasoning bit of salt whatever you want. Press together into patties (they wont really hold together until they're cooked) make uniform lumps on the skillet fry it up in a bit of a butter and keep pressing them with a spatula to make them flatter and flatter. Cook to your liking mush or just crisped on the outside. I like making them from mashed potatoes myself. Just add the egg to luke warm mashed potatoes mix uniformly. Make patties fry up in some butter and that's all you need it's like fried mashed potatoes.
You'll need: 12 oz. of flaked smoked mackerel, 1lb. of potatos, coriander, parsley, half a red onion, half a clove of garlic, basil, 1 tspn dijon mustard, salt and pepper, 4 oz. of flour, 2 eggs (whisked a bit), 8 oz. of oatmeal, and fresh Gooseberries. Boil the potatos in water until they're soft, drain them and leave to cool. Mix the mackerel, chopped herbs, mustard, garlic and finely diced onion into a bowl. Add the potatos and MASH to remove lumps. Season with salt and pepper and weigh out into 4 oz. cakes. Once all the mix is weighed, dip it into the flour, then dip into the egg, then the oatmeal. To cook, you either grill gently, bake, deep fry or shallow fry. Frying is much easier. All you do is cook in a non-stick pan for 5-6 minutes each side in a little olive oil or butter. Garnish with some gresh gooseberries.
