"What" a water bath is, is when you place a cheesecake in a baking sheet with sides, you pour in hot water around the cheesecake after the spingform pan has been wrapped with foil so the water wont seep in.
"Why" its used is, so the cheesecake's surface wont crack when its cooled. This method works sometimes but not all the time. If you dont want people to see the cracks, just cover the surface with something. I like to use whipped cream, Oreo crumbs, and stewed fruit toppings.
