Some vehicle cooling systems will have a bleeder valve to get air out of coolant after adding new coolant and/or making repairs. There is no such thing as a bypass gasket, you have been misinformed, or correction has been poorly explained.

The water neck is plastic and will leak at the block. Most problem's from this water neck can be repaired by replacing the water neck (Expect to pay $ 60.00 for this item). Be sure to clean and remove old gasket material and silicone before installing the new water neck. You will also need to open the bleeder on top of the water neck to purge all air from the cooling system. Then tighten bleeder when air has been purged. If you are not mechanically inclined do not attempt this......
It is most likely the thermostat housing gasket or the bypass hose that runs from the water pump to the intake manifold.
Brake bleeder? Clutch bleeder? Coolant bleeder?
Yes, antifreeze can leak from a water pump gasket.
A valve to bleed out air manually
If you're referring to the water pump gasket, and, if you're changing a faulty water pump, a gasket should come with it and also needs to be changed (Use the grey Permatex gasket sealant on the new gasket). If you're referring to the head gasket - not necessarily.
