One-dish meals can be interesting, convenient and flavorful.
Casseroles, soups, rice dishes, noodles and other pasta shapes (with sauce, or just with butter or oil), all make perfect single-dish meals, needing only a fork or chopsticks to eat.
I consider it a waste of time to cook only sufficient one-dish type foods for serving on one occasion. It's far more efficient, and delicious, to cook casseroles, sauces and soups slowly over sufficient time to achieve a gorgeous richness, and then to refrigerate (they keep well for a few days), just adding pasta, rice and so on, and pan-cooking or microwaving as required. A simple bowl of stew or soup served with fresh bread can be heavenly.
Other one-dish meals are omelettes and other egg dishes such as scrambled eggs or frittata, which can be eaten in slices like Pizza.
The plainest single-dish meal can be brought to life, visually, just with a sprinkling of freshly-chopped green herb, or chopped nuts, or grated cheese.
For one, you could prepare ask your wife/girlfriend/mother to prepare a sandwich while you watch the television.
if you are a girl, you should go make your husband/boyfriend/father a sandwich and then proceed to do laundry.

Make something uncommon and different and it will for sure be interesting. Most of all, it has to be tasty.
