In recent food news, Kraft Foods Inc has announced that it will increase the whole grain in more than 100 products over the next three years, including its popular Ritz and Premium crackers. Whole grains will at least double in the company’s Wheat Thins crackers and Honey Maid graham crackers. But what exactly does this mean? What is a whole grain and what benefits does it have for human health?

All grains are divided into two subgroups: whole grains and refined grains. A whole grain contains the entire grain kernel, including the bran, germ, and endosperm. A refined grain is one that has been milled, a process that removes the bran and the germ. Refining grains gives them a finer texture and increases shelf life, but it also removes essential nutrients such as fiber, iron and many B vitamins.

Some examples of whole grains include whole-wheat flour, bulgur (cracked wheat), barley, corn, oats and oatmeal, millet, whole cornmeal, rye, and brown and wild rice.

Dietary guidelines suggest that adults get at least half of their recommended five to eight ounces of grains per day from whole grain sources. According to the USDA, whole grains can reduce the risk of Heart disease, improve digestion, help diabetics control blood sugar, and may aid weight maintenance.

Nutritionally, whole grain products often have more protein and more fiber than refined flour foods. For example, a commercially prepared white bread has 1.9 grams of protein and 0.6 grams of fiber, while a slice of whole-wheat has 3.6 grams of protein and 1.9 grams of fiber.

Part of the confusion about whole grain foods has to do with health claims on food package labels. A product can state that it “contains whole grains”, but the amount may not be at a level that provides health benefits – just product sales.

However, in order for a manufacturer to claim a food is a “whole grain food” or to use the FDA health claim which states “"Diets rich in whole grain foods and other plant foods and low in total fat, saturated fat, and cholesterol, may help reduce the risk of heart disease and certain cancers" the product must have at least 51% of a whole grain ingredient by weight per reference amount customarily consumed.

Whole grain foods may also be endorsed by the Whole Grains Council if they contain at least 8 grams of whole grain per serving.
