This all depends on your location, market demands for your area, and whether other neighbors are indeed making more money raising hogs than cattle or vice versa. In some areas, cattle bring more money to the farm or ranch than hogs will. On other areas it's the exact opposite. This all depends on the input costs that you have to pay in order to raise these animals. On most hog farms, the expenses for raising and feeding hogs, not to mention depreciation costs on buildings and equipment, is much higher than it is for raising beef cattle that are raised on pasture for most if their lives, with the only inputs being Fencing, labour and fuel costs in making hay, etc. The hog market is also very volatile: one year the markets could be favourable for making money, and the next it's a bust year and you're better off getting out of the hog business than staying in it.

In today's world, neither are as profitable as the other, plus it also depends on where you live. In the USA and Canada, however, cattle tend to be more profitable than sheep because there's a higher demand for cattle to be raised than sheep. If you were in New Zealand or England, sheep would be more profitable than cattle.
