When text is 'knocked out' of an imprinted background (think white text in a printed black box), the black ink can encroach on the area that should remain white. This causes 'plugging', and thinner areas of the type (such as the top curve of a lower case 'n') can turn black completely.
The colors used in the classic Harley Davidson logo are black, white and orange. Specifically the logo background is black with white text for "Harley Davidson" and orange text for "Motor Company". There is also an orange border around both the white and orange text.

left mouse click on the tab that you want to rename (this is called setting the focus). Then Right mouse click on it and a small menu appears - left mouse click on the RENAME option and the tab will trun from white background and black text to black background and white text. Type in the name you wish the worksheet to be called then left mouse click on the work sheet anywhere to keep that name in the tab
There is no App called imessages. It's just called Messages and it is a white text bubble on a green background.
I believe this would be either white or black, and here are some thoughts about that: White is primarily used in background color. Gone are the days of web design when it was "cool" and "to expand on this and provide color option to make the page more attractive to the reader. Your options boil down to this: if you use a light background, use a dark text but if you use a dark background, use light text. And avoid shifty (and wild) color changes on the background behind the text.

The text may be highlighted in black or have a black background. In that case that can be changed to see the text. Another possibility is that the text has been redacted using some special software to do so.
