Saturation refers to how saturate, or bright and colorful, the colors are in an image. There are several ways to adjust the saturation of an image in photoshop. You can select a layer and then in the tool bar menu go to Image>Adjustment>hue/saturation. This will bring up a box with three sliders on it. The middle slider allows you to ajust the saturation.
The other way to adjust the hue saturation is to click in the bottom of the layers pallet the small black and white circle and select hue/saturation which will pull up the same box with the same sliders.
The difference between the two is that the first method will actually change the colors of the image. The second method will create a new layer on top of your image.
