The human egg is real because it has real life baby in it and a chicken egg at it have yolk in it and after a few weeks or month then the baby chick come out.
They are call chalaza and are strands of protein that hold the egg yolk centered in the albumen. The fresher your egg is the more prominent the chalazae are and they are perfectly edible. Once cooked they are not visible and are similar to the material of the egg white. Stale eggs will have had them but they will have disappeared as the egg lost moisture.
Brown eggs are not " stained" brown, they are naturally that colour. Egg shell colours depend on the type and colour of the chicken that laid the egg. White chickens will produce white eggs and brown chickens will lay brown eggs. It's due to the amount of melanin, similar to the difference in human skin colours.
