Fine sand is best for mortar.
Phosphoric Acid will do the trick, it etches the concrete and when it is cleaned away with plain water, it takes away the dirt and the other offending materials. Remember, this acid is strong and although it does not froth, it will do it's job, gently but, firmly. The longer you leave it, the harder it will work.

If they are fat squat and irregular shaped, you're looking at a big block. There are other differences too, for example bore and stroke. A small block generally has a shorter stroke and is thought to rev higher, whereas a big block has a longer stroke with more torque. There are other disputed difference between a small and a big block. And for the most part, you can simply tell by the displacement. Generally, anything larger than 366 CID is a big block.

make sure the mortar is not too runny, it should be a nice dryish consistency, then use an appropriate pointing tool and use a wire brush to quicky remove any mortar on the face of the brick.
