The engine coolant temp (ECT) sensor on that 97 S10 2.2L would be found close to the thermostat.
A faulty engine temp sensor can do that.
Replace the engine coolant temp sensor.
A bad engine temp sensor can do that.
If it has a 4.3L engine the temp sensor is located next to the thermostat housing.

That would be the engine coolant temp sensor for the dash gauge only. The sensor near the thermostat housing is the engine temp sensor for the ECM.

The temp sensor for the ECM (engine control module) is next to the thermostat housing.
Assuming this is a 4.3L engine, the engine temp sensor would be located on the side of the drivers side cylinder head, near the spark plugs.
