A female chicken has can be classified as a pullet until about 1 year of age, after that she's a hen.

A male chicken is a cockerel until mature, they a cock at maturity. Often the term "rooster" is thought to be defined as male chicken, but traditionally, a flock of chickens only had a single rooster, but could include many cocks. The rooster was the alpha male at the top of the social hierarchy of the flock.
