The 1997 VW heater hose has swivel nuts on each end of the hose. Turn the swivel nuts to the left to remove the heater hose.
You can find a vacuum hose diagram for your 2005 VW Jetta at your local VW dealership. Most local libraries will have VW service manuals with the vacuum hose diagram.

You can install a circulating block heater in your 2001 VW Beetle on the bottom radiator hose. The installation is quite simple.
The 1997 VW Jetta air conditioning condenser drain hose can be found on the bottom of the air conditioner compressor. The drain hose will direct condensation to the bottom of the engine compartment.
That p/n is just called an "angled hose" or "angled vacuum system hose" or "oil breather pipe."
Was it coolant? Possibly a leaking heater core.
