There are a couple of differences. Normally, a meeting is of only one company's people, whereas a convention brings people from different companies together. The other difference is that at a convention there will be outside vendors. If it's a restaurant convention, all sorts of companies that sell things to restaurants will buy booths and display their products to the restaurant owners. If it's a Joe's Crab Shack manager's meeting, they don't need to do that because corporate buys all their stuff for them. More info: A meeting is private, such as a company meeting with various employees, or a meeting between an attorney and his client, or a meeting between a real estate agent and client, etc. A convention is more of a public forum, being open to many people, such as a medical convention, where people from many different disciplines of the medical profession attend, such as physicians, nurses, pharmacists, physical therapists, etc.

Other examples of conventions would be a convention for shoe salesmen, department store managers, etc. Conventions are usually held for a specific field of professionals, and where you pay a fee to attend.
