Gluten Intolerance is just a term used to describe being sensitive to gluten. A small proportion of people with gluten intolerance will test positive to celiac, so are said to have Celiac Disease.

Gluten Intolerance affects around 15% of the population and Celiac Disease around 1% of the population. Unfortunately Celiac Disease is largely undiagnosed so that up to 75% of people with Celiac Disease, don't realise they have it.

Returning a negative result for celiac doesn't necessarily mean it is OK to have gluten.

If symptoms are present (things like bloating, flatulence and/or burping, adominal pain, diarrhoea and/or constipation, itchy rash or painful joints) it is a good idea to try out a gluten free diet and see if it helps.

This doesn't mean cutting down on gluten containing foods it means eliminating them entirely or symptoms and/or damage to the intestine will continue. The gluten free diet is particularly important for those diagnosed with Celiac Disease and it is interesting to note that some people with Celiac Disease suffer none of the above mentioned symptoms - but may find out they are Celiac because of becoming anaemic (low in iron) as those with gluten intolerance will have problems absorbing nutrients.

Long term effects of eating gluten when one is Celiac include intestinal damage, leaky gut syndrome, anaemia, osteoporosis, malnutrition, infertility, miscarriage, depression, dental enamel defects and even certain forms of cancer such as lymphoma of the small bowel. In children, undiagnosed Celiac Disease can cause lack of proper development, short stature and behavioral problems.

Gluten is found in all types of wheat (except buckwheat which is actually a grass), rye and barley - so you have to watch out for things like malt too. Gluten intolerant people generally avoid oats also, however this has more to do with the oats being contaminated with wheat during transport. It is possible to get contaminant free oats and studies on celiacs who eat these oats have shown no long term detrimental effects.

An allergy is caused by your immune system reacting to specific a specific protein or proteins. For example, what some people term an iodine allergy, is actually the body's

immune system reacting to a long chain

protein which just happens to have an iodine

molecule attached to it.

A food intolerance is basically, a descriptive term for the body simply not being able to digest and utilize the specific food in question. The body reacts fairly immediately with stomach distress, diarrhea, and or general feelings of discomfort. With lactose intolerance for example, the body reacts with a range of gastric distress signals. Stomach ache, spitting up, heart burn, gas, diarrhea or constipation can all be part of an intolerance presentation.

Interestingly, you can have and an allergy to the same food.

Allergic reactions are in part caused by a stressed liver, which is no longer able to keep up with the demands the environment and body needs at the present moment. This e plains why the body response to a cold is very similar to it's response to an allergy. Your body might be able to tolerate wheat say, at a certain smaller amount, but when you eat wheat every day, grass Allergies might kick in full blown, if you mow the lawn.
