The higher the temperature is when the sugar is being cooked, the harder the candy is. Soft candy is usually made in temperatures that aren't as hot as the temperatures hard candy is made in. An exception can be rock candy. Some types can be made at room temperature although I make mine in a very cold place(like the fridge or freezer).

the difference is that hard candy is meant for old people and soft candy is meant for the young people but middle age can pretty much eat both if you don't eat it

2. Umm, I'm not totally disagreeing but wouldn't it be the other way around? Wouldnt it be easier for old people to eat soft things? And young people hard??? Plus, babies would have to eat soft things as well. Think about this, really.
