Well,basically pepsin starts the breaking down of proteins in the stomach.Then protease is produced in the pancrease and small intestine.The protease in the small intestine is the last time protein is broken down in the body.

The main enzyme in the Stomach is Pepsin which is used to digest protein. Only protein digestion occurs in the stomach and almostt no absorption, (only a little alcohol). This protein is not secreted as its active form (ie not as pepsin) but as the Zymogen (the inactive precursor to proteins) Pepsinogen which cleaves in a low pH to form the active enzyme.
Enzymes dont digest proteins they act as cataylst to break down the protein, there is a difference. :D As one enzyme is specifc to one type of protein, there are a wide variety of them, For example. Amylose (in out saliva) is catalyst by amylase the enzyme. Lactose in dairy is cataylsed by the enzyme lactase. And Cellulose (in plant cell walls) is catalysted by Celluase.
Rennin : It is an enzyme (protein) secreted by kidneys to regulate the blood pressure. It's a digestive enzyme in gastric juice. Renin :It is a hormone.
