A Jaconde or Biscuit Joconde is a fancy cake with a decorative sponge around a mousse or jelly filling usually. La Joconde or La Gioconda is what most of Europe calls The Mona Lisa. I dunno which your trying to figure out.
Its a thin almond sponge cake used mostly in gateaux (like gateau Opera)
Basic Recipe is:
A. Almond meal 285g
Icing sugar 225g
Plain flour 75g
B Egg 375g
C melted butter 60g
D Egg whites 270g
Caster Sugar 75g
Method:
1 In a mixing bowl combine group A, mix well
2. Add group B slowly and beat
3. fold in melted butter
4. whisk group D to a soft meringue and fold into the mixture
5. spread the mixture onto a tray lined with greaseproof paper at least 3mm thick
6. bake at 220 degrees C for 7 - 10 mins
7. cut before cooling as it will become harder and more brittle upon cooling.
