I can't give you a psi but I can say that the Capri generally reads low on oil pressure and high on temperature. Neither is actually that low or that high, it's a gage issue. I've heard cleaning an engine ground cable will help but haven't tried it myself.

It surely depends on a few things, do you have the proper viscosity oil in the engine, how long has it been since you changed it. Running thinner than recommended or old oil will cause the pressure to show lower than optimal. How big is the pressure swing if it moves back and forth within the normal range then that is fine, pressure should increase with engine rpms but if it goes from below normal to above normal then you will have to start with a fresh oil change and filter, then change out the oil pressure sending unit, then move on to crankcase ventilation and possibly oil pump.
