i would go see the catedral metropolitian, and probably one of the most exciting things I personally would want to see would be the Panteon National de los Heroes it's a memorial to soldiers. and around it is like a plaza with lots of vendors and on holidays they have folk dancing and music. Also, outside of the capital, there a lot of nature and rural-lifestyle to see. Ask about "Salto Suizo" in Colonia Independencia, or anywhere in the department of Cordillera or Paraguari.
