Mainly depends where you go in Canada. Since Canada is a multicultural country , there isn't really A traditional dish. Yet, due to it's location, there are a lot of maples in the country thus making maple syrup very popular.
I only know that in the Eastern part of Canada (Quebec), around march/April ,the "sugar season" takes place. Most families go to the "sugar shack" where is served a traditional diner similar to those of the peasants of the colonization era: beans, ham, salted bacon, potatoes, omelet, sugar pie and pancakes (certainly a recent addition). All those dishes being served with maple syrup.
Poutine is a typical Canadian food. This dish is French fries with gravy and cheese. Smoked beef Sandwiches and beaver tails are also popular in Canada.
Canada has many fresh fish and you can get venison, elk, and other game dishes. They also have pure maple syrup. And don't forget to stop at Tommy Horton's for coffee and donuts.

No, poutine is not a national food in Canada. I am Canadian, and I'm speaking for my folks. We, Canadians do really love poutine! It is very popular, but it is not national. For those who don't know what "poutine" is, it's fries with the topping of barbecue sauce (the real and Canadian one) with that squeeky cheese. It is so good! But back to the question: no!
