What he meant by carbohydrate, protein, alcohol, and fat was one gram of each. This is the same chart with correct spelling. These are not exact.

Calories is the measurement of the amount of energy the fat/carb/protein produces. This energy comes from the breaking of carbon bonds --> electron transfer --> oxygen converted to water. Each fat molecule contains 3 fatty acids, all of which have carbon bonds that can be broken, in comparison to a glucose molecule (all carbs are eventually converted to glucose and then broken down).

Thus, 1 gram of fat produces greater energy (has more calories, 9kCal/g) than 1 gram of carbohydrate or protein (4kCal/g).

Yes, calories from fat are about twice as many per gram (9 instead of 4).
