Cakes cook quickest on the middle shelf because, when the oven is switched on, the heat rises from the bottom of the oven and passes through the middle of the cakes (this helps you get better cakes because they rise more).

If you would like to cook your cake quickly and efficently without over cooking it or burning it, it is best that it is placed directly in the center of the oven. This way the cake is cooked also cooked evenly.

Whether a cake is placed on the top or bottom shelf will have no effect on the speed of baking time, but could cause scorching on the top or bottom of the cake. The oven racks should be positioned so the cake is in the middle of the oven.

Theoretically top shelf is meant to be the hottest (since warm air rises). However, in reality this theory tends to fail since all ovens are different. It's best just to find out where the hottest parts of your oven are. (Some people do this by baking a tray of cupcakes and seeing which ones cook quickest/burn and which ones remain undercooked; cupcakes turn golden quite easily which is why they are used as a test).

Whether items bake faster on the top or bottom shelf depends on where your oven heats up. Normally the heating element is on the bottom so it will bake faster on the bottom shelf.

Depends on your oven. For general use the best one to use is the middle one. The one not closest to the top of oven AND the bottom of the oven.

My layer cakes have a very coarse and open grain structure near the top center. How can I eliminate this problem?

Perhaps you should turn your oven down so your cakes can cook thoroughly in the centre, but have a smooth texture on the top. I don't know what kind of oven you have, but fan ovens are usually the best as they evenly cook the cakes, rather than create a bubbly layer on the top. Another cause could be sugar. I always find that the sugar in a cake mixture has to be mixed thoroughly with an electric mixture; this ensures that the cake won't separate and become grainy as it cooks.
