Two great programs for organizing and editing photos are Adobe Photoshop and Lightroom. Advanced color grading is available in Capture One, but Affinity Photo offers more robust tools at a lower price. Canva and Snapseed are easy-to-use choices for novices. Excellent free, open-source substitutes for sophisticated editing are Darktable and GIMP.

There is always UCLA which has programs for the arts including photography. It is a very good program with reknown photographists graduating from there.
An iMac does not come with photography programs already installed. There are, however, programs available to download free of charge, or to purchase. The free programs are good, but if you are a photography whiz/fanatic, you may need the purchased program.

Adobe Photoshop is the industry standard for digital photography and don't let anybody tell you anything else. Microsoft Photodraw is good but doesn't have the editing features.
Any digital camera is a good start, HD doesn't really pertain to still photography anymore. Only video
