In fact, there are many gluten-free recipes out there that contain molasses, as well as gluten-free products that contain it. Therefore, I think it is safe to assume that molasses is truly a gluten-free product. Surprisingly, many gluten free pastas are coming onto the market. They have some at Jewel Os-co, Trader Joe's and a store called New Vitality. My favorite type of pasta is tinkyada from Jewel Os-co. It is wheat free, gluten free, cholesterol free, low fat and low sodium, has a good consistent texture, not mushy, and Al Dente. They are the spiral types. They won't say there is none if they aren't sure because they could make you or your heirs very rich if they B.S.'d it.

Maize, i.e. corn, is gluten free, but maize flour, i.e. corn flour or corn meal might not be. Wheat flour is commonly added to corn flour and corn meal to enhance its binding quality for baking. Be sure to check the package to ensure that it says "Gluten-free." If it does not say that, check the ingredients to see if any wheat or wheat by-products have been added.
