Fuel pressure for a 1997 Chevy S10 with a 4.3L engine requires 60 to 66 psi.
Assuming this is a 4.3L engine, cycle the key off and on several times until the pressure peaks. The fuel pressure gauge should read 60 to 66 psi if all is well.
Key on engine off, Should read 60 to 66 PSI. No lower are higher are you will have problems.
Fuel pressure should read no less then 9 LBS. and no more then 13 LBS. And yes it should hold the pressure with key on, engine off.

If it is CFI, the fuel pressure regulator could be leaking fuel. If the check engine light is on, have the codes read.
Lay under the truck and disconnect the TANK side of the fuel filter. BE CAREFULL SOME FUEL WILL LEAK OUT. Then slide the rubber hose that's on the fuel pressure gauge onto that line and clamp it down tight, then turn key on and read the gauge. You should have no less the 9 LBS. and no higher then 13 LBS. of fuel pressure.

the fuel pump is probaly bad Need to run a fuel pump pressure test, and check fuel pump relay, check fuel pump fuse on passanger side fire wall. Only if you have no fuel pressure, gauge should read 9 to 13 LBS of preassure.
