Antifreeze could protect engine to -20 to -30 degrees. Water (with no pressure) will boil at 212 degrees. Antifreeze will delay "boil-over" to a much higher temperature (I am not sure of number)

Also, antifreeze actually helps keep your car running cooler in summer. If you use straight antifreeze, the car will "boil over" at a much lower temperature. There will be less protection.
