The Japanese Pearl Harbor Naval Strike Force (Kido Butai) departed Hitokappu Bay (Kurile Islands-Japan) enroute to Hawaii on 26 November 1941 at 0600 hours local time. These aircraft carriers arrived at a position about 220 miles north of Oahu about 0530 hours 7 December 1941 (local time) and began launching their first wave of the air attack at 0600 hours. It took about 20 minutes for all the 183 aircraft of that first wave to take-off & assemble in formation over the carriers. At that time, about 0620 hours, the first wave turned towards Oahu Hawaii. The first attacks were by Zero fighters at Kaneohe Air Station on Oahu. At 0755 hours the "Val" dive-bombers hit Pearl Harbor, Hickam Field, Wheeler Field & Ford Island.

How come the US carriers at pearl harbor were not destroyed?

The attack by Japanese dive-bombers, torpedo planes and fighter aircraft on Pearl Harbor clearly demonstrated the superiority of aircraft over surface ships. It follows that the American carriers, with their large number of attack planes, posed a significant threat to the Japanese fleet. Failing to destroy the American carriers (because they were not present at the US base) meant that the major US strike force was untouched in the attack. Had the carriers been sunk, the Japanese could easily have attacked the west coast of the USA.

Why did the Japanese choose to bomb Pearl Harbor and not California or something?

The United States Pacific Fleet was moored at Pearl Harbor and it would take a major US fleet to defeat the Japanese. The attack was so successful in destroying the US Pacific Fleet that a large portion of the US Atlantic Fleet needed to come from the East coast through the Panama Canal to fight the Japanese in the Pacific.
