When water mixes with the oil, it emulsifies, and turns to a gel-like substance.
After the head is replaced, change the oil; then drive the vehicle for a couple hundred miles and change the oil again. That should clear up the problem with the oil.
But make certain that the head truly is cracked before you throw it away and get a new one.
Usually it's not a cracked head, but instead it's typically a blown headgasket. A head can warp when an engine overheats, and when the head warps, the headgasket will blow. You'll need to have the head resurfaced if the head is warped.

After the engine is repaired, drain the engine oil, remove the oil filter and leave the drain plug out of the bottom of the engine over night. Complete the oil change with a new filter. For assurance you may want to repeat this process in about 200 - 300 miles. This should do it but I am sure there isnumerous methods that will work as well?

Example -- IF the engine temperature while driving down the road is 195 degrees a bad head gasket or a crack in the head may not open at 195 degrees and you think you have no problem. But as soon as you shut it off , The engine temperature rises to probley 210 are so degrees and that is hot enough to make the cylinder head gasket or crack in the head to leak for a very short time, and dearing that time engine coolant leaks into the cylinder puddling on the top of the piston Then when you start it in the morning it smokes white until it burns the coolant out of that cylinder. The problem will only get worse, Needs fixed now before you have major engine damage. Heat makes things expand, Cold makes things contract. A crack will only open at a certain degrees of heat.
