It's not that easy.

To reduce weight you want to reduce your calorie intake, and by comparison, vegetables usually have low calorie content.

But they all have some calories, so if you're eating heaps and mounds of them, don't expect much weight loss.

Also, while replacing french fries with a small pile of (raw) carrots is a good idea, replacing fries with butter-cooked, or cream sauce vegetables won't be half as helpful.
