Vicksburg was, indeed, the last Confederate fort on the Mississippi, and its presence allowed Texas beef and other goods to cross into the Eastern Confederate states. By taking this crucial point, the Federals split the Confederacy in two, following the very good advice to "divide, and conquer."

Vicksburg is a city that sits atop high bluffs on the banks of the Mississippi. This is very unusual, as for almost its entore length the banks of the Mississippi are very flat, and there are few places where there is any high ground beside the River. Port Hudson, Louisiana is also a bit elevated, but nowhere near as much as Vicksburg. The Confederates had created batteries of cannon at both those places, to sink any Union ship that tried to go by. This gave the Confederacy control of that stretch of the MIssissippi between Vicksburg and Port Hudson. This was important because on the other side of the River, the west wide, the Red River empties into the Mississippi between those two Confederate strongholds. The Red River was the transportation route for supplies coming from Texas to the eastern Confederate states, and this was the main source of beef and horses for the Rebel armies in the east. The piece of the Mississippi between Vicksburg and Port Hudson was the only part of the River still under Rebel control after the first few months of 1862.

So for the Rebels the goal of the Vicksburg campaign was to hang on to Vicksburg (and without holding Vicksburg, Port Hudson would not matter and could not be held anyway), keep control of that last piece of the Mississippi, and keep open the vital supply line from the westen part of the Confederacy (called "The Trans-Mississippi").

For the Yankees the goal was to capture Vicksburg (after which Port Hudson would, and did, fall, one week later), cut off the Rebel supplies from the west, and gain complete control of the entire length of the Mississippi. This would effectively divide the Confederacy in two, keeping not only supplies but any large numbers of troops from going back and forth as the Rebels might want.
