I would say something quiet, lots of pasture. Maybe not too close to a road in case the horse is maybe scared of traffic, but close enough you could do something with the horse to help it, hence you might need a road to work with, but not a really busy road. quiet, soft trails, building up to more harsh trails. You wouldn't want it to be in the middle of nowhere because you wouldn't get much business if that's what you are looking for. A place a horse can just be a horse for a while... :)
