Anchovies add a distinctive flavor to foods. They can be used in many ways as an ingredient in a dish or as a topping as with Pizza. Anchovies are one of the main flavors in Caesar salad dressing and are found included in the ingredient list of many condiments like Worcestershire sauce. They are a small fish, often used as bait, too. In cooking use they have been preserved by being kept in a brine for a maturing period and then, once cured, preserved in oil or salt, therefore, the flavor can be salty. The ones preserved in salt are usually soaked in water before use to remove the excess saltiness. They can be used as a paste to disappear after added or left whole or minced for bigger bursts of the flavor.
